Overview of Placement: Work experience in the Hospitality Operations area will be undertaken in one of the two Mess precincts at Lavarack Barracks, managed by the Australian Army Catering Corps.

Tasks may include kitchen hygiene duties, preparation of breakfast items, food preparation, preparing and plating sandwiches and pastries for morning teas, assisting table clearing and resetting, p reparing lunch menu items, servery replenishment and assisting with dinner preparation duties.

Students will receive an overview of a working kitchen, work within the day shift roster supervised by the kitchen ration supervisor (SGT or CPL) and see how rations are processed in barracks from receipt to consumption in the bulk cooking environment. No field exercises are incorporated into the work experience program, however there may be opportunities from time to time for students to visit a field kitchen during Army exercises.

Lunch will be provided and students will sit with the Other Ranks Kitchen Shift after the lunch service is completed.

Work hours are 9.00am to 3.00pm.
Special Conditions of Placement: This work experience placement is highly suitable for students currently undertaking Certificate II in Hospitality (Commercial Cookery/Kitchen Operations) who require a work experience placement as part of their course.

Students who are undertaking Hospitality as a school-based subject are also eligible to apply.

ALL students must have successfully completed a Safe Food Handling course or Unit of Competency to participate in this placement. Proof of completion must be submitted with the Work Experience Application form.

Students should ideally have some experience in a training kitchen and have passed a Safe Food Handling course, to ensure Food Safety policies and guidelines are adhered to. The student must be proficient in handling a knife.

Students should have their own protective dress including hat, apron and kitchen safety boots (no sandshoes or flat surface shoes) and ensure their dress consists of a long sleeve shirt and trousers appropriate for the kitchen. Students must maintain a neat and tidy dress at all times.

It is ideal, but not essential, for students to bring their own knives (minimum chef's knife, steel and paring knife).
